Delicious Fritters

For the batter:
1 cup flour
1 ½ tspn baking powder
3 eggs, separated
½ tspn salt
⅔ cup milk
Method:
Add the flour, baking powder and salt to a mixing bowl and make a well in the centre.
Separate the eggs, keeping the whites aside, add the yolks to the well in the flour.
Add the milk and mix to form a nice smooth batter using a whisk.
Using an electric beater, whisk the egg whites to form stiff peaks.
Gently fold the egg whites into the batter mixture.
Flavouring your Fritters:
½ finely diced onion
1 can creamed corn
1 Tblspn chopped parsley
OR
Fresh mussels steamed and chopped
½ diced onion
1 Tblspn chopped parsley
Other Ideas:
Grated and blanched potatoes (mock whitebait fritters), mashed peas, grated zucchini, diced tomatoes, feta and cauliflower (blitz the cauli in a food processor), broccoli (finely chop) and blue cheese, cooked chicken and thyme. Fitters are a great way to use up left-overs!
Cooking your fritters:
Take a frying pan and heat on a medium heat
Add a splash of oil and add spoonfuls of your batter mixture to the pan, gently cook until bubbles start to form on the top of your fritter, then, flip the fritter over using a fish slice or spatula. Don’t cook too many at once as they might run into each other and stick together.
