Quick and Easy Tomato Sauce

It is always good to have a quick sauce recipe up your sleeve.  This recipe is a regular in our house and can be used on so many things. You can essentially use it to replace the tomato sauce you buy from the supermarket.  We use it on burgers, in wraps …and the list goes on. It is quick to whip up – it takes about 10 minutes to make.  Give it a go – once you have tried it, it will be hard to go back to store bought sauce.

The great thing about whipping up a Tomato Sauce like this – you know exactly what is in it.  It is made with ingredients commonly available and can be made year round. In Summer when fresh tomatoes are readily available you could make this recipe with fresh – just be sure to pass it through a sieve once you have cooked it (to get rid of the tomato seeds).  You can even use green tomatoes if that is what you have on hand.

I often add a bit of chilli to this recipe to spice it up, but it is equally as delicious without chilli.

Quick and Easy Tomato Sauce

4 cloves garlic, chopped

1 medium diced onion

1 can chopped tomatoes

1 tsp salt

1 tsp chilli flakes or powder (optional)

10 ml grape seed or oil for frying

1 Tblspn white wine vinegar (for preserving)

1 tsp sugar

Method;

In a pot, fry the garlic and onion in the oil on a medium heat until soft and clear/translucent.

Add salt and chilli (if you are making chilli sauce)

Pour in the can of crushed tomatoes and add the sugar and vinegar.

Reduce the sauce on a low heat by 1/3, stirring occasionally so the sauce doesn’t burn.

Blitz the sauce with a hand blender until nice and smooth. You could pass the sauce through a sieve if you don’t want tomato seeds in the sauce. This sauce should keep in the fridge for up to a week. You can use it hot or cold.
