We had an amazing roast chicken with veg for dinner last night. In our house this simple meal forms the basis of several meals for days to come. There are only two of us in the house so over the next few days we can expect to have:
- roast chicken sandwiches for lunch
- roast veg and chicken frittata for dinner and then packed lunch for work
- roast veg salad – roast veg, feta, herbs, good olive oil, lemon juice
- soup (using the carcass to start the stock)
Next up…..it is that time of the year….our lemon and lime trees are fruiting. This year is the first time we are going to get a decent crop off the lime tree. Our lemon tree is prolific. Righto…what to do with this lot? Any ideas?
